Fresh Foraged Huckleberries arrive in their purest expression on Lantern Donuts first-ever Huckleberry offering. We’ve been looking forward to making this one all year.
Most often when you get anything that claims to be huckleberry, it’s usually one of three things:
1. It's got an extract blended with blueberry or other fruit,
2. It's an even more fake “naturally flavored” syrup-based flavor that’s 90% sugar and chemicals, or sometimes,
3. It’s created using some frozen huckleberries (often from last season) with a more dubious, dulled flavor. Fresh is almost never available.
We decided a long time ago that when we did our Huckleberry donuts, we’d create them with only fresh-foraged North Idaho huckleberries that will never be frozen. Huckleberry plants and their fruit are super delicate, and the best flavor is only available when they are utilized in their fresh unspoiled form.
So, as part of our new Forest Flavors series, we took our signature raised brioche donut, and dipped it in a house-made fresh huckleberry icing we create by blending 100% fresh-foraged North Idaho huckleberries and sugar. That’s it. We then cover the glaze with whole, fresh, locally foraged huckleberries at their peak flavor. This donut is finished by the chef with a smooth huckleberry cream he’s created, and a few fresh variegated mint sprigs (reminiscent of the huckleberry leaves) that complete the donut with a clean fresh note and beautiful color.
Built around the flavors of the Inland Northwest, this seasonal donut showcases fresh, locally foraged ingredients at their best.
