These are the menu items that have been released so far in this ongoing Spring and Summer series. Ones noted as Sold Out will not become available again. Forest Flavors disappear quickly, so as soon as we announce a new flavor, be sure to get in to try it right away.
Fir + Fern
Fir Tip Icing • Candied Fiddlehead Fern and Fir Tips • Fir Tip Whipped Cream • Pine Pollen
Our local forager went deep into the mountains to handpick fresh fir tips that were just budding out, and the tender tips of the Fiddlehead Fern.
Our chef then took these beautiful ingredients and turned them into an incredibly fresh donut that smells like a walk in the spring forest, and tastes fresh and sweet.
The Morel
Cold Brew & Coral Mushroom Icing • Candied Morel Mushrooms • Coral Mushroom Powdered Sugar
Morels and Coral mushrooms are some of the first ingredients you can get from the local North Idaho forest in the springtime, and we had to make sure to include these wild ingredients in our first release.
We made a cold brew icing from our coffee, infused it with Coral Mushrooms, and turned the morels into a deliciously crunchy and mildly sweet candy.
The donut is finished with a one-of-a-kind Coral Mushroom Powdered Sugar we created in house.
Wild Flower
Lilac Icing • Candied Wild Rose • Wild Honeysuckle
Inspired by the flowering forest hills of late spring, Wild Flower brings together some of the season’s most delicate floral ingredients.
To accomplish this flavor, our raised brioche donut is dipped in a lilac icing, capturing the soft floral character of the blossom without overwhelming the palate.
Candied wild rose is added over the top for texture and gentle sweetness, while honeysuckle petals complete the build with a light floral finish.
Fragrant, seasonal, and built around ingredients that celebrate the arrival of warmer days. The third offering in our Forest Flavor Series.
